Not quick or easy recipes As an Indian and a life long vegetarian, I was so excited for this book and preordered it, but was pretty disappointed. There are a lot of recipes, but they are overly complicated. They also assume you have all the accessories to the instant pot and that you have a certain size. For example, the cheesecake one basically has you put a pan inside the instant pot, meaning you have to one large enough to do so. There are several others that require things like steaming racks. They are also kind of hard to follow because the directions are in paragraphs versus numbered steps. I was looking for quick and easy vegetarian Indian recipes and most of these have steps outside of the instant pot or require prep (like soaking lentils fours hours in advance). I was hoping this book would cut some of that out (as I've seen done in other Indian recipes). Again, good variety of recipes but just not what I was looking for, the "quick" and "easy" part of the description is very deceiving.Yogurt setting ferment dosa batter perfectly Idli & dosa making got easier for me.I can now walk in the kitchen with my head held high I am a know nothing Indian kitchen ignoramus, who got tired of getting nagged by his wife and in-laws about his lack of culinary skills. In short order, this book and the Insta Pot have helped me silence my critics, chief among them being my otherwise beloved wife. This book is emancipation for the harried male, a veritable Rosetta Stone that helps unlock the mysteries of how to cook an acceptable Indian diner.The greatest difficulty you will face is assembling the ingredients, which can be remedied by a trip to your neighborhood Indian grocery. The directions are very clearly laid out and tough to do incorrectly. Trust me, if I can successfully prepare this book’s tasty recipes, so can you.Update: it's now been a few months, pretty much tried everything, not one recipe disappoints.My go-to book for Saturday night cooking. Highly recommended for non Indians who want to try their hand at preparing Indian food that is a lot better than the garden variety restaurant fare -- and much less expensive, too! For those new to Indian cooking, I would recommend that you reduce by half any recommendations for red chillies or chilli powder.
